Unit 1. Have a taste of Korean Culture: Kimchi <品嚐韓國的文化-泡菜>

Recently, traces of Korean culture can be found everywhere. From Korean cuisine and TV dram to contemporary pop music, people in Taiwan are experiencing a rather different East Asian culture.

最近 , 韓國的文化蹤跡(traces)在四處都可以找的到。從韓國的料理(cuisine)到電視劇，甚至到當代的流行音樂，台灣的人正在經歷著相當不同的東亞文化。

While we enjoy the tasty Korean food, however, we do not really know about the origins of kimchi -  a traditional Korean side dish.

然而我們在享受美味的(tasty)的韓國食物時，我們卻對於一種傳統的韓國小菜(side dish)-泡菜起源(origins)不清楚。

The main ingredients of kimchi are vegetables and seasonings. In fact, there are hundreds of varieties of kimchi. Each family uses a different recipe, as kimchi is a dish passed down for generations from mother to daughter.

這個主要的泡菜食材(ingredients)就是蔬菜和調味料(seasonings)。事實上，泡菜有數百種的各式種類。每個家庭都有自己的獨特食譜(recipe)，因為泡菜是一種母女代代相傳的(for generations)一道料理。

It can be made in all seasons, but the best time to make it is in the autumn. The most common kind of kimchi that can be found in Taiwan is made from the Napa cabbage.

泡菜在所有的季節都可製作，但是最佳的製作時間就是在秋季。最常見的泡菜種類，在台灣都可以找的到的就是大白菜。

The process of making kimchi is not complex, but it is time-consuming. In fall, kimchi is made by stuffing spices between layers of salted, uncut Napa cabbages.

製作泡菜的過程並不複雜(complex)，但是很耗時(time-consuming)。在秋季 ，塞進辣的調味料(spices)於一層一層(layers)用鹽醃過的(salted)的整顆大白菜葉子之間(between)來製作出泡菜。

The way traditional kimchi is made depends on the different vegetables in season. Modern way kimchi, however, can be made at any time of the year because now people have refrigerators.

傳統泡菜的製作取決於(depends on)當季的不同蔬菜。現代版的泡菜，然而，可以在一年的任何時間都可以製作出來，因為現在的人們都了冰箱。

We may at first be fooled by the fiery taste of kimchi. But the side dish is actually very healthy because the vegetables used to make it contain a high percentage of fiber, which of course is good for our digestion.

我或許起初會被泡菜的辛辣(fiery)味道給騙了(be fooled)。但是這個小菜實際上是非常健康的因為用來製作泡菜的蔬菜含高比例的膳食纖維(a high percentage of fiber)，可以促進我們的消化(digestion)。

At the same time, kimchi is low in calories and fat. It is even ranked among the top five “World’s Healthiest Foods” because, in addition to aiding digestion, it is rich in vitamins and may reduce the growth of cancer cells.

同時，泡菜熱量(calories)和脂肪(fat)都很低。它甚至排在『世界上最健康食品』的前五名當中。因為，除了(in addition to)促進消化(aid digestion)，它含豐富的維生素(vitamins)，又可能可以減低癌細胞(cancer cells)的生長(growth)。

Although we can buy any variety of kimchi at any time of the year, when it comes to eating it, Korean families tend to have traditional seasonal preferences. To us, kimchi may be a side dish to enjoy with Korean BBQ, but for Koreans it is a dish that brings the family close together, a tradition which will continue for year to come.

雖然我們在一年任何時期都可以買到任何各樣的泡菜，當我們說到要吃泡菜的時候，韓國家庭卻傾向吃傳統的季節風格泡菜。對於我們來說，泡菜或許只是一道小菜來搭配韓國烤肉可以享用的東西，但是對於韓國人來說，它是一道可以將家庭維繫的更近，一個延續未來的一個傳統小吃。

一個富爸爸帶自己的兒子去體驗窮人家的生活是什麼樣子

One day a very wealthy father took his son on a trip to the country for the sole purpose of showing his son how it was to be poor. They spent a few days and nights on the farm of what would be considered a very poor family.
有天 ，一位家庭富裕的老爸帶著他的兒子去鄉下渡假只為了一個簡單的目的-就是帶他的兒子看看貧窮的生活是什麼樣子。他們在被視為一個貧窮家庭的農場上度過了幾天的夜晚。

After their return from the trip, the father asked his son how he liked the trip. “It was great, Dad,” the son replied. “Did you see how poor people can be?” the father asked. “Oh Yeah,” said the son.
在他們回途的路上，老爸問了他的兒子他多麼喜歡這個旅程。兒子道:『這旅程很棒耶老爸!』。老爸問:『你有看出來窮人家是怎麼樣子的嗎?』。兒子回他:『喔，有阿!』。

“So what did you learn from the trip?” asked the father. The son answered, “I saw that we have one dog and they had four. We have a pool that reaches to the middle of our garden and they have a creek that has no end. We have imported lanterns in our garden and they have the stars at night. Our patio reaches to the front yard and they have the whole horizon.
『所以你從這個旅程學了什麼?』老爸問。 兒子回應說『我看到了我們只有一隻狗，而他們卻有四隻。我們有一個延伸到我們中庭的一個游泳池，而他們有無邊無際的小溪。我們的花園裡面有燈，而他們夜晚有很多的星星。我們有到前院的露台，而他們卻有完整可以看到的視野』
We have a small piece of land to live on and they have fields that go beyond our sight. We have servants who serve us, but they serve others.
『我們有一塊小地可以居住，而他們卻有超過我們眼界的開闊田野。我們有可以服務我們的傭人，但是他們卻是服務著我們。』
We buy our food, but they grow theirs. We have walls around our property to protect us, they have friends to protect them.” The boy’s father was speechless. Then his son added, “It showed me just how poor we really are.”
『我們買我們自己的食物，但是他們栽種他們自己的食物。我們有我們的家和牆可以保護著我們，但他們有朋友們可以保護著他們。』
Too many times we forget what we have and concentrate on what we don’t have. What is one person’s worthless object is another’s prize possession. It is all based on one’s perspective.
有太多次我們都忘記了我們自己擁有什麼，而卻一直專注在我們缺少的。一個人所擁有的無價之物卻是別人重視的寶物。這一切都取決於一個人的觀點。
Sometimes it takes the perspective of a child to remind us what’s important.
有時候阿~卻要讓孩子的觀點去提醒我們什麼東西才是重要的。

讀英聞

一個猶他州的郵差請求幫忙一個負擔不起讀書的小男孩

Mathew Flores, a 12-year-old boy from Salt Lake City, loves to read! Sadly, he does not have access to books or the internet like most modern day American kids. Until recently, the mail advertisements and junk mail delivered by the mailman daily were the only reading materials available to Mathew.
馬修佛爾斯. 一位來自鹽湖市(美國猶他州的首府) 熱愛閱讀的12歲小男孩。令人難過地 , 他沒有任何的管道可以讀書，甚至像大多數的現代美國小孩子一樣可以有網路使用。一直到最近，透過郵差每天寄送的郵件廣告和垃圾信件卻變成馬修這個小男孩唯一的閱讀教材。
One day, Mathew approached his mailman Ron Lynch, asking if he could have any more junk mail. The odd question confused Lynch and inspired him to further inquire on this simple request.
某天，馬修走向了一位-名叫榮恩霖屈的郵差先生,問他可否可以跟他要更多其它的垃圾郵件。這個奇怪的問題讓郵差先生困惑了 , 因此更啟發他好奇進一步詢問這個小男孩為何有這個簡單的要求。
Shortly after Lynch’s brief encounter with Mathew, he posted this heartbreaking message on his Facebook page. “Today while delivering mail to his apartment complex, I saw him reading ads, and then he asked me if I had any extra mail he could read. He told me his wish is to have books to read. I told him the library has many, but he said they don’t have a car and couldn’t afford the bus.”
在短暫的和馬修這個小男孩相遇後沒多久，這個郵差放了這個令人心碎的消息在他的臉書網頁上---『現今 ,正當我在寄送郵件到住宅大樓 , 我看到他(馬修)閱讀廣告，並且接著還問我是否可以給他任何的額外廣告單讓他可以閱讀。這個小男孩告訴我他的願望就是有書可以讀 。我告訴他圖書館有很多書籍，但他卻說他們家沒有車子，而且更不可能負擔的起公車』
Lynch then asked his Facebook friends if they could spare some books for Flores.
霖屈郵差先生接著詢問他在臉書上的朋友們是否可以分享一些書給這個小男孩(馬修佛爾斯)。
Lynch wrote, “Most kids his age want electronics! It’s great to see his desire and you should have seen him beam when I said I could help!
霖屈寫著 「大部分像他年紀的孩子要的只是電玩遊戲產品! 看到這個孩子的慾望只是如此真的很棒，而且當我告訴他我可以幫得上忙時，你應該要自己親自看看這孩子臉上的笑容 ! 」。
Lynch told local news outlet KSL about his encounter with young book lover Mathew Flores and assumed his efforts would help Matthew acquire 50-60 books, but to Lynch’s surprise his Facebook post went viral!
霖屈告訴了當地的報紙關於此和這個小書迷的遭遇 ，並且認為他的努力將會幫助這個馬修的小男孩獲得50到60本的書，但是出於霖屈的驚訝，他的臉書一放上此訊息就散布各地。
Books have been sent to Mathew from all around the world including countries such as the U.K., Australia, and India. HUNDREDS of books have been delivered to Mathew and his sister Jasmine.
書本從那時候開始就從世界各地的國家，包括英國、澳洲和印度等地寄送到馬修的家。上百本的書陸續的寄送到馬修的家給他和他的姐姐潔思米。
Lynch has a message for every person who was touched by Mathew’s story and love of reading enough to send him one or more books, “I’m stunned and humbled by what happened. I deserve little credit. It’s all of you who cared enough to do something about it that are the true heroes of this story. Bless you all, and thank you all so much!”
霖屈有個訊息要給每個被馬修的故事所感觸的人以及跟他一樣喜歡閱讀並且寄書給他的人。『因為發生這些 ,我很震驚又很謙虛。我其實沒有什麼功勞。這些所有關心這個故事的人才是真正的英雄。感謝你們，非常祝福你們！』
When Mathew started receiving books in the mail he was in disbelief when he saw they were addressed to him with the note – These books are for you. Mathew told the Salt Lake City’s Deseret News he cannot wait to read every last book and share them with other kids.
當馬修開始收到這些書時，他還不敢相信他自己所看到的信件上面都是給他 ，信件上面寫著 - “這些書都是給你的"。馬修告訴鹽湖市的報紙 ，他真的等不及閱讀這每一本書，並且分享給其他的孩子們。

The story of Mathew Flores receiving his first books is a heartwarming example of a simple act making a powerful difference in another’s life. Never underestimate the effect of love in action. Well done, Ron Lynch and those who sent books!
馬修佛爾斯收到書的故事是出於一個只是簡單之舉就可以讓另外一個人的人生有著強大的改變的感人例子。千萬不要低估愛的行為的影響力。做得很好! 榮恩霖屈和這些寄書給他的人們。
